Austin is home to a few famous kombucha brands, each with their own take on the naturally carbonated drink. But fans of the fermented beverage know that the city’s reigning kombucha queen is Tiana Olivo.
A Texas native and lifelong creative, she created her own kombucha brand, Bruja’s Brew in 2017, selling it at local offices, restaurants, and hotels. But you no longer have to go searching to get your fix because Bruja’s Brew has opened a mobile kombucha bar at The Outpost Food Park, an open-air, all-vegan food truck park.
So, what’s different about Bruja’s Brew? Well, for starters, every batch of their fermented sips are made with fresh herbs like sage, thyme, lavender, parsley, rosemary, and mint, to name a few. Add some carefully-paired spice, organic fruit (and a little inspiration for good measure), and you’ve got a signature Bruja’s Brew on your hands.
If you’re not ready to grab your growler, get a load of their most popular flavor: Unholy Roller, made with a base of black tea—fermented, of course—that's steeped in organic blueberries, dried lavender flower, holy basil (tulsi), and fresh mint. This combination creates a sweet and light blend with mood-boosting properties that’ll leave you feeling energized and refreshed.
Naturally, booch is at the heart of Bruja’s Brew, but there’s more to the brand than just tangy beverages. From pick-me-ups like wheatgrass and lemon-ginger shots to vegan tapas, they’re also in the business of feel-good foods. And while the menu is constantly evolving to make room for new creations, we’re currently having a love affair with their sandwitches made with Easy Tiger bread, organic popcorn dusted with Himalayan salt, and kale chips covered in a cashew-based sauce.
