But Carryn and Bret Burton are looking to change that — as it turns out, there are a whole lot of us who would rather spend our money on new ski gear or another day on the slopes than an overpriced overnighter. Enter: Colorado’s first pod hotel! Cohabit aims to combine the social elements of a hostel and the comfort and privacy of a boutique hotel at a price point we can all swallow. Rates start at just $100 per pod.
Well, it didn’t take long for the Gravity Haus concept to catch on. The first location has been open all season in Breck, and apparently, they’re not messing around, because they’ve got two more locations in the works. Friends, get ready for Gravity Haus Vail and Winter Park! They’ll be taking over the Vail Mountain Lodge in Vail and the Sundowner Motel in downtown Winter Park in November or December 2020!

Introducing Bluebird Backcountry, a liftless ski area that’s opening February 2020 at Peak Ranch. Located between Kremmling and Steamboat Springs, it will feature 300 acres that can be accessed solo and another 1,200 acres that require hiring a Bluebird guide. Though, unlike your typical backcountry, Bluebird won’t be free. You can snag a day pass for $50 or a season pass for $250. First-timers can also grab a day pass, lesson, and rental package for $190.
What started as a small food truck with a big passion is now laying down roots in Boulder. The Bumbling Bee vegan junk food has opened its brick-and-mortar at 1100 28th St. The kitchen cooks up plant-based comfort food eats like burgers, tacos, and milkshakes that are big on flavor and entirely meat-free. They have a website, but you’re better off grabbing the scoop on their Facebook page for now.

Rumors have been swirling that super healthy, scratch-made salad chain Sweetgreen is headed our way. And now, it’s official — they’re setting up shop in the former Aji space at 1601 Pearl! They’ll also be serving up their epic salads in Cherry Creek and LoDo in Denver. Timing and more details are still TBD, but you better believe we’ll share ’em when we’ve got ’em!
Capitalizing on the success of its Denver outpost, Ash’Kara is opening in Boulder! The brainchild of chef Daniel Asher (of Acreage and River and Woods), the fresh and flavorful Middle Eastern spot will be opening this spring in the former Pepper the Noshery space at 1043 Pearl. Expect the same wood-fired meats and veggies, plus plenty of organic hummus and housemade bread.

And now, they’re doing something about it. Lace up those tennies and get ready to train — the Boulderthon marathon and half is happening this fall! It’ll run through the heart of the city on October 11, so you can soak in the energy of the town and the views of the mountains at the same time.

Gravity Haus is bringing its modern social house concept to Vail. They’ll be taking over Vail Mountain Lodge once this ski season has wrapped, so expect them to be open for business by next fall.
Food Halls are taking over the Colorado food scene, and we’ve got another headed our way! Avanti Food & Beverage is scheduled to open a two-story space this spring right on Pearl Street Mall. The incubator model will mimic that of the Denver outpost, and while specific sites are yet to be announced, you can expect the same kind of fresh concepts that are housed at the OG location.
