Move over, Starbucks (all 160ish of you) — there’s a new coffee shop in town! Limitless Coffee & Tea, the clean coffee company that launched with beans, cold brew, and more from Protein Bar founder Matt Matros in 2016, has opened its very first flagship location.
After testing the concept out with a one-year pop-up in the space formerly housing Logan Square’s Owen + Alchemy, the company is settling into a new permanent home in Fulton Market.
If you’re expecting run-of-the-mill lattes and cappuccinos here, think again: Limitless isn’t your average café. Using wet-washed beans that are then air-roasted in-house, even your standard cup of joe is brewed in the cleanest manner possible — the method is said to remove toxicities.
When it comes to more complex drinks, things get even more interesting; drink choices currently include a charcoal latte (activated charcoal is believed to have detoxifying and digestive-boosting properties, though it is not recommended for those taking medications), a mushroom elixir latte, a lavender latte, and a beet rose latte.
In addition to its unusual beverages, Limitless will offer up a rotating menu developed by former Roister cook Gina Calamia. Like its drinks, the café’s food options place a heavy emphasis on healthy food with a unique twist — think Banana Brulee and avocado smash with MCT oil vinaigrette. Bread is sourced from James Beard-nominated baker Greg Wade of Publican Quality Bread.
Then, there’s the actual roastery. Primary operation will take place in the new Green St. location, though the company also retains its original roastery at 316 N. Elizabeth St.
Last but not least is the space’s design, which is meant to look like a “high-end office.” Matros’ hope is that customers will feel comfortable enough to work in and even host creative meetings in the building. Sounds like a pretty sweet deal to us!
