After much anticipation and daydreams about steamed buns and rice bo[w]ls, we welcome REBoL into Public Square with open arms and eager stomachs.

With a name like REBoL, you might expect this restaurant to be serving up some rebellious, revolutionary cuisine. Well yeah, they are. And our taste buds are so in on this food movement.

Unlike typical American restaurants, REBoL breaks the mold with a menu entirely free of GMOs. That’s right – everything you consume here will be the highest source of ingredients. And when we say everything, we mean it. Whether you’re devouring breakfast, lunch, or dinner, everything in your meal is 100% organic.

Changing the world, one ‘Bol’ at a time

This quick and casual restaurant gives a whole new meaning to ‘fast food’. The Indian/Asian/American-themed menu celebrates individuality, allowing you to concoct your perfect meal. Create your own ‘bol’ by choosing your protein, picking a base (sticky rice, zucchini noodles, spinach, etc.), some toppings (like kale & cashew slaw with curry peanut sauce!), and top it off with unique sauce and garnishes.

But, if you’re like us and can’t always make up your mind with so many yummy options, you can always order one of their signature Bols and some side pieces like their Sticky Wings (gochugaru honey with basil aioli!).

Oh, and if you think REBoL only caters to feasters, you’re just wrong. Whether it’s breakfast or dinner, their brewbar menu is so tempting and literally unlike any other. Using the unique Poursteady device, they can easily make five perfect pour-overs at the same time while staying true to each individual order.

The 2,000 square foot restaurant can house up to 90 dinners at a time. However, now that Public Square has undergone a $50 million renovation, take your meal outside to their gorgeous patio surrounded by flower boxes with views of the public square fountain.

Super bonus: There’s even more outdoor fun after dinner! REBoL has cornhole and an outdoor ping pong table to welcome friendly competitors. Bonding over Bols. Nice.
