Chef Chloe Coscarelli has been making waves in the food scene ever since becoming the first vegan chef to win Cupcake Wars in 2015. After that, she co-founded by CHLOE., a trendy plant-based restaurant on a mission to make vegan food more accessible and Insta-worthy (do yourself the favor of endlessly scrolling their ’gram.)
News to some, she has since cut ties with her namesake empire amidst a lot of behind-the-scenes drama (more on that shortly) and turned over a new leaf in the best possible way.
The queen of plant-based eats has opened a restaurant concept in Miami dubbed Chef Chloe and the Vegan Cafe.
You can find it set up in the St. Roch Market, alongside 11 other chef-driven concepts in a giant 10,000-square-foot space. Similar to places like Eataly—the Italian marketplace-style space in LA, Boston, NYC, and Chicago—this is not a dine and dash affair. It’s an experience.
What St. Roch Market offers is a complete 180 from by CHLOE., which markets itself as a fast food chain. From an entrepreneurial standpoint, this makes total sense for Chloe, considering her move to Miami is a new beginning.
The chef found herself in hot water in 2017 after she was accused of “gross negligence” by her corporate parent, ESquared Hospitality. After a 12-day arbitration in New York, a mediator ruled that Chloe had failed to put the company’s interest before her own and should, therefore, be fired, as well as mandate the termination of her 50% partnership with by CHLOE.
No worries, though. Chloe’s latest vegan endeavor offers a fresh, eccentric menu we can’t stop thinking about. How do Butternut Squash Nachos with cashew queso sound?
That’s just a small taste of the entrées that make up the chef’s impressive lineup. Whatever your choice, it will not disappoint. And, in case you were wondering, yes, Chloe’s signature guilt-free vegan cookies and cupcakes also made the cut.
Head over to St. Roch Market Sunday through Thursday from 8am to 10pm and Friday and Saturday from 8am to 11pm to get your hand on all the plant-based goodness. Oh, and keep an eye on Chloe's Instagram, where she regularly posts daily specials.
Though her ugly, public break-up with her first go ’round might have left a bitter taste in her mouth, Chloe’s future sure is looking sweet!
