It’s no secret that going vegan comes with a long list of benefits. For starters, it’s environmentally-friendly, cruelty-free, and good for you. Sounds like an easy choice, right?

Unfortunately it’s not quite that simple, especially when the list of reasons not to go vegan includes cheeseburgers. And chicken. And jerky. And steak. And—perhaps the hardest goodbye of all—bacon. You get it.

But what if we told you the whole not eating meat part of veganism didn’t have to mean saying so long to cheesy slices of pepperoni pizza forever? We know it sounds too good to be true — but we’ll explain.

MEAT — MEET YOUR MATCH

Minneapolis probably isn’t the first place that comes to mind when you think of vegan dining options. But maybe it should be! In 2016, the Northeast neighborhood became home to the first vegan butcher shop in the US of A: The Herbivorous Butcher.

The name might sound a bit contradictory, but the premise of the shop is simple. Animals and animal products are out and 100% vegan noshes made using substitutes like wheat gluten and jackfruit are in. And the results are good. Really good.

The magic first started when a bro and sis team brought their meatless creations to the Minneapolis Farmers Market and later started a Kickstarter campaign in hopes of opening their first brick and mortar location. And well, it worked! Now, the Twin Cities is graced with delicacies like Korean BBQ Ribs and Sizzlin’ Cajun Jerky and Meatloaf.

Did we mention there is vegan cheese? You’ll find everything from almond-based feta to soy-milk/coconut oil-based queso at The Herbivorous Butcher. And, as if that isn’t enough, the shop also stocks a whole bunch of goodies ranging from candies to condiments that all live up to their #allveganeverything motto.

If you’ve made it this far in the post, you’re probably hungry and wondering how the heck you get your hands on all this goodness. Thankfully, Herbivorous Butcher is open six days a week for you to stock up on all of your favorites. You can also order online and check out the myriad of TC (and nationwide!) restaurants that use HB products on their menus. (You can even grab a vegan brat or Italian sausage from Target Field’s Kosher Stand at the next Twins game!)

But that’s not all. The masterminds behind Herbivorous Butcher have set a food truck loose on the streets of Minneapolis and St. Paul. And we have just three words for you: chicken-free fried chicken.
