We usually don’t think twice about grabbing a meal at one of DC’s fast-casual eateries during the lunch rush — and there are many. But a buzzy new restaurant hailing from NYC is coming to Georgetown and they want to remind that healthy doesn't mean flavorless and eating vegetables doesn't have to be boring.

DIG IN

Veggie-centric eatery Dig is all about plates piled high with local, good-for-you food. And soon, you’ll be able to line up for one of their fully-customizable lunches or dinners at the corner of Wisconsin Ave NW and N Street NW.

We know you’re itching to hear all the details about the mouth-watering menu, but we’ll get to that in a minute. It’s important to note that Dig is more than just the food it serves — it’s a company that places mindful sourcing and food waste reduction at the heart of its farm-to-table movement.

And when you choose to eat at Dig, you can count on tasty, sustainably-grown dishes. A partnership between a team of talented chefs and small-scale farms helps the fast-casual counter in more ways than one. Working directly with these local farms means they stay in business while keeping the cost of your meal down, and some clever cooking ensures you’re eating veggies from root to leaf.

FIELD TO FORK

So, just what exactly will you be eating? Although Dig shakes things up seasonally, the current menu in its NYC shops is a good example of the elevated, home-style cooking you can expect.

Start by stepping up to the counter and loading your bowl with a base of farro, brown rice, or farm greens. Then the fun starts. If you’re looking for a warm and cozy meal on a cold winter day, go for options like Cauliflower with Garlic, Charred Brussels Sprouts with Honey-Chili Oil, and Jasper Hill Mac and Cheese. Want something a little lighter? The vegan Three Beet Salad and Cashew Kale Caesar can do no wrong.

You can choose to make your bowl entirely veggie, or add a protein, like the juicy charred chicken, fresh wild Alaskan salmon, or grilled organic tofu. Then, top it all off with an in-house specialty sauce (we highly suggest the pesto or tarragon mustard). Yes, you just put together the best lunch or dinner you’ll ever buy out.
